This recipe is adapted from one sent in by a reader, Maureen Stronach.
500g brussels sprouts
1 tbsp extra virgin olive oil
Juice of 1 lemon
1 tbsp unsalted butter
Salt and pepper
Method
Cut sprouts in half, remove "core" and slice thinly across the grain. Heat oil on a moderate flame; add sliced sprouts and half the lemon juice. Cook for exactly 60 seconds, stirring constantly. Turn off heat, add remaining juice and season. Add butter, mix through and serve.
