For a fast option, buy vanilla yoghurt and don't worry about the vanilla bean.

Ingredients

  • 5 blood oranges

  • 1 vanilla bean, halved lengthwise (optional)

  • 1/2 cup creamy natural yoghurt

Method

    1. Use a knife to cut the skin and pith from four of the oranges and slice into discs. Lay in circles on serving plates. Juice the other orange and strain. Pour over the slices.
    2. Scrape the vanilla seeds into the yoghurt and mix well. Dollop over the orange and serve.
