The vodka is optional in this spicy play on a traditional gazpacho. The small quantity of alcohol adds a mysterious quality to the chilled soup rather than overpowering it.
9 roma tomatoes
3 celery sticks
1/2 small red onion
2 garlic cloves
1 red capsicum
800ml tomato juice
150ml extra virgin olive oil
100ml vodka
2 tsp Tabasco
2 tbsp worcestershire sauce
3 slices stale white bread
Salt
Freshly ground white pepper
Celery leaves for garnish
Roughly chop tomatoes, celery sticks, onion, garlic, capsicum. Combine with remaining ingredients, except celery leaves, in a large bowl and marinate overnight.
Blend and pass through a coarse strainer. Adjust seasoning and garnish with celery leaves before serving.
