Braised tofu with pork

Ingredients

  • ½ teaspoon sichuan peppercorns

  • 1 tablespoon oil

  • 4 spring onions (scallions), thinly sliced on the diagonal

  • 3 cm (1¼ inch) piece fresh ginger, julienned

  • 2 large garlic cloves, crushed

  • 500 g (1 lb 2 oz) pork fillet, trimmed and cut into

  • 2 cm (¾ inch) pieces

  • 4 tablespoons honey soy sauce

  • 4 tablespoons rice wine vinegar

  • 2 tablespoons soft brown sugar

  • 3 star anise

  • 300 g (10½ oz) silken firm tofu, cut into 3 cm (1¼ inch) pieces

  • 1 large handful coriander (cilantro) leaves

Method

  1. Step 1

    Heat a wok over high heat and dryfry the peppercorns for 1 minute. Remove and grind to a powder in a spice grinder or mortar and pestle. Add the oil to the wok and swirl to coat. Cook the spring onion, ginger, garlic and pepper for 1 minute, then add the pork and cook for 2 minutes, or until browned.

  2. Step 2

    Combine the soy sauce, vinegar and sugar with 125 ml (4 fl oz/½ cup) of water and add to the wok with the star anise and tofu. Reduce the heat and simmer, covered, for 10 minutes, or until the pork is tender. Stir in the coriander and serve with rice.
