870 g jar pitted morello cherries
1/2 cup (60 g) self-raising flour
2 eggs
1 cup (250 ml) skim milk
1/2 cup (125 g) caster sugar
2 teaspoons butter, melted
2 teaspoons grated orange rind
icing sugar, to dust
Preheat the oven to moderate 180°C (350°F/Gas 4). Drain the cherries very well and place on paper towels.
Sift the flour into a mixing bowl. Whisk the eggs, milk, sugar, butter and orange rind together in a separate bowl. Make a well in the centre of the flour and gradually add the milk mixture, stirring constantly until the batter is smooth. Do not overmix.
Arrange the cherries over the base of a 20 cm, 1 litre ovenproof dish. Pour in the batter and bake for 40 minutes, or until golden brown and firm. Dust with icing sugar and serve immediately. Delicious with low-fat ice cream.
