A light salad paired well with steamed fish.

Ingredients

  • 1 bunch garlic chives, trimmed, and cut into finger lengths

  • 1 punnet cherry tomatoes

  • 1 punnet pear cherry tomatoes

  • 1 bunch chives, finely chopped

  • Handful watercress, leaves picked

  • 1 tbsp balsamic vinegar

  • 2 tbsp extra virgin olive oil

  • Sea salt and freshly ground black pepper

Method

  1. Blanch the garlic chives in boiling water for 1 minute. Drain, place in a bowl with the tomatoes, chives and watercress.

    Whisk together the balsamic vinegar and olive oil, pour over the salad and toss. Season to taste.
