Ingredients

  • 6 chicken thigh cutlets
  • 2 cm piece fresh ginger
  • 2 teaspoons ground fenugreek
  • 2 cloves garlic, crushed
  • ½ cup mint leaves
  • ¼ cup vinegar
  • ½ cup coriander leaves
  • 1 teaspoon salt
  • 2 teaspoons turmeric
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cardamom

Method

1. Trim chicken pieces; cut a few slits in each cutlet.

2. Grate the ginger to make one teaspoonful. Place fenugreek, garlic, ginger, mint and vinegar, coriander leaves, salt, turmeric, cloves and cardamom in food processor. Process to a paste.

3. Place the chicken pieces in a shallow baking dish; rub all over with spice paste. Marinate chicken for several hours, or overnight in the refrigerator.

4. Bake in preheated moderate 180°C oven for 45 minutes; or place under a hot grill and cook until tender.
