This popular and impressive dish is easy to make, especially if you ask your fishmonger to kill, clean and cut up your crab. Other raw crabs also work.

Ingredients

  • Vegetable oil

  • 1 large mud crab, cleaned, gills and guts removed and cut into pieces

  • 3 long red chillies, deseeded and chopped

  • 6 garlic cloves, chopped

  • 1 tbsp grated ginger

  • 1/3 cup tomato sauce

  • 1/3 cup chilli sauce

  • 1/3 cup soy sauce

Method

  1. Heat a little oil in a wok and fry crab in batches until shell has turned bright red and meat is just cooked through. Transfer to a bowl and keep warm.

    Heat a little more oil in the wok and gently fry chilli, garlic and ginger until just starting to colour. Add remaining ingredients and simmer for a few minutes.

    Return crab to wok and coat in chilli sauce. Serve immediately with a little rice.
