2 tablespoons cocoa powder
1 cup (125 g) self-raising flour
60 g light cream cheese
1 teaspoon finely grated orange rind
½ cup (125 g) caster sugar
½ cup (125 ml) skim milk
⅓ cup (80 ml) freshly squeezed orange juice
½ cup (95 g) soft brown sugar
1 tablespoon cocoa powder, extra
icing sugar, to dust
Preheat the oven to moderate 180°C (350°F/Gas 4). Sift the cocoa powder with the flour, at least twice. Using a wooden spoon, blend the cream cheese, orange rind and sugar until smooth. Do not overmix.
Fold the milk and dry ingredients alternately into the cream cheese mixture, then stir in the orange juice. Pour the pudding mixture into four 1½ cup (375 ml) ovenproof ramekins.
Combine the brown sugar and extra cocoa, and sprinkle evenly over the puddings. Carefully pour ½ cup (125 ml) boiling water over each pudding and place on a baking tray. Bake the puddings for 35 minutes, or until firm. Serve dusted with icing sugar.
