A festive take on the classic muffic.

Ingredients

  • 250g plain flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 100g glace cherries

  • 50g currants

  • 50g chopped dates

  • 1 free-range egg, beaten

  • 180ml milk

  • 150g caster sugar

  • 60g melted butter

Method

    1. Lightly brush a muffin tray (12 moulds) with oil and dust with flour, tipping out the excess. Preheat the oven to 180C.
    2. Sift the flour, baking powder and salt into a large bowl. Stir through the dried fruits.
    3. In another bowl, mix together the remaining ingredients, then gradually fold into the dry ingredients using a spatula. (Do not over-mix or the muffins will be heavy.)
    4. Spoon into the muffin moulds and bake for 12-15 minutes, or until golden brown.
