Ingredients

  • 2 corn cobs

  • 1 tomato, seeded and cut into small dice 

  • 1/2 red (Spanish) onion, finely chopped

  • 2 small red chillies, seeded and finely chopped

  • 1/2 bunch chives, finely chopped

  • 1/2 bunch coriander, finely chopped

  • 2 tbsp balsamic vinegar

  • 2 tbsp extra virgin olive oil

  • Bunch rocket

  • 4 large or 8 smaller chicken sausages

Method

    1. Place the corn cobs in a saucepan of boiling water for 5 minutes. Drain. Use a sharp knife to cut the kernels from the cobs and place in a large bowl. Add the tomato, onion, chillies and half the herbs.
    2. Whisk together the vinegar and olive oil and toss through the salsa.
    3. Grill or barbecue the sausages until cooked as desired. Spoon a mound of salsa on each serving plate. Scatter a little rocket around the salsa and arrange the sausages on top. Garnish with remaining herbs.
