Ingredients

  • 12 small, round, unpeeled potatoes
  • olive oil
  • sea salt
  • pepper
  • 1 tbsp of fennel seeds
  • a few thyme sprigs

Method

Preheat oven to 250C.

Boil 12 small, round, unpeeled potatoes then place on an oiled baking tray.

Smash each one flat with a potato masher, brush with olive oil, scatter with sea salt, pepper, a tablespoon of fennel seeds and a few thyme sprigs and bake for 30 minutes or until very, very crisp and golden.

  • This recipe is the best, and is totally adaptable with the selection of herbs or cutting bacon into cubes and cooking with that. Have been eating this recipe since first seeing it in Herald 20 years ago.
