Ingredients

  • 12 small, round, unpeeled potatoes

  • olive oil

  • sea salt

  • pepper

  • 1 tbsp of fennel seeds

  • a few thyme sprigs

Method

  1. Preheat oven to 250C.

    Boil 12 small, round, unpeeled potatoes then place on an oiled baking tray.

    Smash each one flat with a potato masher, brush with olive oil, scatter with sea salt, pepper, a tablespoon of fennel seeds and a few thyme sprigs and bake for 30 minutes or until very, very crisp and golden.
