Ingredients
- 3 cups rolled oats
- 1 cup walnuts, chopped
- 1/2 cup almonds
- 1/2 cup cashews (or sunflower or sesame seeds)
- pinch sea salt
- 1/2 tsp cinnamon
- 1/3 cup sweetener (such as maple syrup, barley malt, rice syrup, honey or a combination)
- 1/4 cup safflower oil (optional)
- 1 tsp vanilla essence
- 3/4 cup dried fruit (raisins, dates, figs, pear, apricot), chopped
Method
Put all the dry ingredients, except for the dried fruit, in a large bowl and combine.
Add the wet ingredients and mix until the dry ingredients are well coated. Spread this mixture on an oiled baking tray.
Set the oven to 160C and bake for 1 hour. Stir occasionally to break up the lumps and turn the tray to cook the granola evenly.
Once cooked, remove from the oven and fold in the dried fruit.
Allow the granola to totally cool before storing - and hiding away - in airtight jars.
