This salad is adaptable - ramp it up with some toasted almonds and finely sliced shallots, or add finely sliced raw zucchini and mushrooms.
40ml extra virgin olive oil
1 tbsp freshly squeezed lemon juice
1/2 clove garlic, peeled and finely crushed
sea salt and freshly ground black pepper
3 Lebanese cucumbers, seeds removed, finely diced
small handful mint leaves, finely chopped
small handful basil leaves, finely chopped
Combine the olive oil, lemon juice, garlic, salt and pepper, and mix well.
Toss through remaining ingredients, check seasoning and serve immediately.
