Apple with cinnamon is one of the most delightful culinary partnerships and my friend Ray's mum's pie is a simple one-bowl wonder that highlights the two ingredients spectacularly.

Ingredients

  • 125g cold butter, chopped

  • 200g plain flour

  • 125g castor sugar

  • 1 egg

  • 2 tbsp milk

  • 4 apples

  • 1 dessertspoon custard powder

  • 2 dessertspoon castor sugar (extra)

  • 2 tsp ground cinnamon

Method

  1. Pre-heat the oven to 180C. · Rub the butter roughly into the flour and sugar (it does not need to be finely distributed). · Combine egg and milk and add to other ingredients, reserving about a tablespoon for glazing.

    Mould into a soft dough with your hands. Put in the fridge while you prepare the apples.

    Peel, core and chop the apples into chunks.

    Roll out two-thirds of the pastry and line a greased 20cm spring-form tin on the bottom and about 5cm up the sides.

    Scatter apples over the base, sprinkle with custard powder, extra sugar and cinnamon, roll out remaining pastry and cover top, glaze and bake for 50 minutes.
