Ingredients

  • 500ml milk

  • 10g cardamom seeds

  • 4 egg yolks

  • 140g sugar

Method

  1. Add seeds to milk, warm milk to slightly hotter than room temperature.

    Whisk egg yolks and sugar in electric mixer until mixture is pale yellow and thick. Pour the warm milk slowly into the yolk mixture, still whisking until well combined.

    Pour the new mixture into a saucepan and slowly cook over low heat until it starts to thicken. Take off heat immediately. Allow to cool before serving.
