This on toast is a truly authentic Italian snack or breakfast
1.6 kg ripe figs
1 cp sugar
1/2 cup honey
3 tbsp finely grated
lemon zest
1 cup water
Prepare figs by trimming off hard stem-end and slicing each fig into quarters. Place in an appropriately sized saucepan with rest of ingredients. Bring slowly to a simmer and keep simmering for 15 minutes until figs are soft. With a wooden spoon, break up any large pieces and keep cooking slowly for another 10 minutes or so until jam is thick. Store in preserving jars according to the manufacturer's instructions.
