Ingredients

  • 8 small to medium artichokes

  • 1/4 cup cornflour

  • 1/4 cup plain flour

  • 2 cups light olive oil

  • 1/2 cup good quality whole egg mayonnaise

  • 4 tablespoons crushed garlic

Method

  1. To prepare the artichokes, cut the stem about 1cm from the flower. Cut the flower (or head) of the artichoke crossways, about half way through. Now cut lengthways through the centre. Use a small sharp knife to carefully cut out and discard any of the furry centre (choke).

    Combine the flours on a plate. Roll each artichoke half in the flour mixture to coat evenly all over.

    Put the oil in a small saucepan on high heat. When the surface of the oil is shimmering add several artichokes and cook for 2-3 minutes, until golden. Remove and rest on paper towel to absorb excess oil. Repeat to cook the remaining artichokes.

    Combine the mayonnaise and garlic in a bowl and serve with the artichokes.
