Ingredients

  • 1 small bunch parsley leaves

  • 1 small bunch mint leaves

  • Zest and juice from 1 lemon

  • 125ml cold-pressed olive oil or flaxseed (linseed) oil

Method

  1. Combine all the ingredients in a high-speed blender until smooth. Season with fresh ground pepper.

    Nutrition per serve: protein, 0.3 grams; total fat, 10 grams (saturated, 1.4 grams); kilojoules, 388. Gluten-free, low GI.
