Ingredients

  • 1kg watermelon, peeled and seeded (about 600g flesh).

  • 2 oranges.

  • 1 green banana chilli, roughly chopped.

  • 1 birdseye (small red) chilli, seeded and finely chopped.

  • 2 tsp grated lime rind.

  • 1 tbsp lime juice.

  • 1/4 cup coriander leaves, roughly chopped.

  • 2 tbsp extra virgin olive oil, plus extra for cooking.

  • 4 tuna steaks (about 200g each).

  • Sea salt and freshly ground black pepper.

Method

  1. Chop the watermelon into 1cm cubes. Use a knife to cut the peel from the orange, removing the white pith as well, and cut the fruit into segments, discarding pips as you go.

    Combine the watermelon, orange, green and red chilli, lime rind, juice, coriander and extra virgin olive oil. Stir well and set aside.

    Heat a chargrill or heavy-based frying pan. Brush the tuna with extra oil and season to taste. Cook for about 2 minutes each side, or as desired. Serve with a spoonful of salsa.
