Home-made muesli bars

Avoid the fat and sugar found in many commercial muesli bars and make your own.

Ingredients

  • 3 cups (350g) natural muesli

  • 1/2 cup (50g) LSA (linseeds, sunflower seeds, almonds)

  • 3 eggs

  • 1 tsp vanilla

  • 1/2 tsp ground cinnamon

  • 60ml olive oil

  • 60ml honey

Method

  1. Preheat oven to 160C. Combine ingredients in a bowl until mixed through. Spoon into a baking tin lined with baking paper. Bake for 25-30 minutes until golden. Cool then cut into 16 pieces.

    Nutrition per slice:

    protein, 4.5 grams; total fat, 8.3 grams (saturated 1.2 grams); fibre, 2.6 grams; carbs, 16.4 grams; kilojoules, 583. Wheat free, low GI.
