A beautiful cooling drink to serve on a hot day, you can add more or less ginger, mint and lime to suit your tastes. The vodka is optional, but rather nice.

Ingredients

  • 220g (1 cup) sugar

  • 500ml (2 cups) water

  • 1 x 5cm piece of fresh ginger, peeled

  • zest of 2 limes, grated

  • fresh mint leaves

  • 80ml (1/3 cup) lime juice

  • vodka (optional)

Method

  1. Place sugar and water in a saucepan, cook over a low heat until sugar dissolves. Shred ginger thinly and add to simmering sugar syrup. Add zest and 2 to 3 mint leaves. Allow to simmer for 5 to 10 minutes to allow flavours to infuse. Strain, add lime juice and place in a bowl.

    Place bowl in freezer for 2 hours. Remove and stir well with a fork to break up the ice crystals. Return to freezer and stir every hour to break up ice crystals for the next 4 to 6 hours. Chill your glasses in the freezer.

    To serve, finely shred some mint leaves and stir through slushie.

    If using vodka pour into chilled glasses, pour slushie over and serve immediately.
