"Every Sunday we have the kids over for dinner and the subject of dessert always comes up pretty quickly," our homecook hero Barbie Dillon laughs. "They love all the old traditional desserts that my mother used to make - it's hard to say no to apple crumble or jam roly poly."

Ingredients

  • 1 cup of butter, plus 2 extra tbsp

  • 2 cups self-raising flour

  • 2 tbsp cold water

  • 1 jar of apricot jam

  • 1/2 cup sugar

  • 2 cups boiling water

Method

  1. Rub the butter into the flour with your fingers. Add water and mix into a dough. Roll out with a rolling pin and spread with apricot jam.

    Roll up, sealing the edges. Place in a large baking dish.

    Slash the top diagonally three times.

    Refrigerate for 1 hour.

    Preheat oven to 180C.

    Meanwhile, dissolve the sugar and 2 tbsp of butter in the boiling water.

    Pour this syrup over the roll and bake for 40 minutes.

    Serve with ice-cream or cream with excess syrup drizzled over the top.
