Ingredients

  • 400g dried linguine.

  • Sea salt.

  • 2 large red chillies, deseeded and finely chopped.

  • Juice 2 lemons.

  • 100ml extra virgin olive oil.

  • 100g parmesan, grated.

  • 1 bunch rocket, roughly torn.

  • Freshly ground black pepper.

Method

  1. Place the pasta in a large pot of boiling, salted water and cook for about 9 minutes, or until al dente. Drain the pasta, reserving 2 tbsp of the cooking water.

    Return the pasta to the hot pot and add the chillies, lemon juice, oil, parmesan and reserved water. Toss until the cheese melts through. Add the rocket and toss gently. Season to taste.
