Fresh lychees are perfectly partnered with lime and sambuca to create this refreshing beverage.

Ingredients

  • 4 fresh lychees, peeled and stoned

  • 1 lime, cut into quarters

  • Crushed ice

  • Splash sambuca (to taste)

Method

    1. Place the lychees and lime in a cup or small bowl. Pound well with the end of a wooden rolling pin or wooden spoon until crushed.
    2. Pour the fruit and juice into a tumbler. Add plenty of crushed ice and top up with sambuca.
