Marinated chicken with field mushrooms and bacon

Ingredients

  • 1 tsp grated ginger.

  • 1/2 onion, grated.

  • 2 tbsp chopped parsley.

  • 1 tbsp mild curry powder.

  • 8 chicken thigh fillets.

  • 1 tbsp olive oil.

  • 1 tbsp butter.

  • 1/2 onion, sliced.

  • 4 rashers bacon, sliced into short batons.

  • 400 g field mushrooms, sliced.

  • Handful of rocket for garnish.

  • Drizzle of extra virgin olive oil.

Method

  1. Marinate the chicken a day before cooking this dish.

    Combine the ginger, onion, parsley and curry powder. Coat the chicken in the mixture and marinate for 24 hours.

    Barbecue or pan-fry the chicken until just cooked through.

    Meanwhile, heat the olive oil and butter in a large pan, add the sliced onion and cook until soft. Add the bacon and cook for a minute or two, then the mushrooms for a further few minutes.

    To serve, divide the mushroom mixture among four plates. Sit two fillets on each bed of mushrooms and top the chicken with a small pile of rocket. Drizzle a little extra virgin olive oil over the rocket and around the edge of the plate.
