1 tsp grated ginger.
1/2 onion, grated.
2 tbsp chopped parsley.
1 tbsp mild curry powder.
8 chicken thigh fillets.
1 tbsp olive oil.
1 tbsp butter.
1/2 onion, sliced.
4 rashers bacon, sliced into short batons.
400 g field mushrooms, sliced.
Handful of rocket for garnish.
Drizzle of extra virgin olive oil.
Marinate the chicken a day before cooking this dish.
Combine the ginger, onion, parsley and curry powder. Coat the chicken in the mixture and marinate for 24 hours.
Barbecue or pan-fry the chicken until just cooked through.
Meanwhile, heat the olive oil and butter in a large pan, add the sliced onion and cook until soft. Add the bacon and cook for a minute or two, then the mushrooms for a further few minutes.
To serve, divide the mushroom mixture among four plates. Sit two fillets on each bed of mushrooms and top the chicken with a small pile of rocket. Drizzle a little extra virgin olive oil over the rocket and around the edge of the plate.
