Ingredients

  • 2 cups mixed berries.

  • 2 free-range eggs.

  • 2 tbsp caster sugar.

  • 3 tbsp dessert wine, such as sauternes or botrytis.

  • 1/4 cup cream, lightly beaten.

Method

  1. Sprinkle a little dessert wine over the berries (optional) and set aside while you make the sabayon.

    In a small stainless steel bowl, combine the eggs, sugar and 1 tbsp of dessert wine. Hold the bowl over a saucepan of gently simmering water and whisk until pale and fluffy (about 2 minutes). Continue whisking as you remove it from the heat. Add the cream and remaining dessert wine, whisking to combine.

    Divide the berries among four serving bowls. Pour over the sabayon and serve immediately.
