Wholesome snacks for the whole family.

- 200g (2 cups) rolled oats
- 25g (1/4 cup) ground linseed
- 80g (1/2 cup) raisins
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 cup natural yoghurt
- 4 eggs
- 60ml olive oil
- 2 tbsp honey
- 1 tsp vanilla extract
- 2 apples
- 125g (1 cup) wholemeal spelt flour
Preheat oven to 160c
Combine oats with linseed, raisins, baking powder, cinnamon, yoghurt, eggs, oil, honey and vanilla in a bowl.
Soak for 10 minutes to allow oats to soften.
Add one grated apple, along with the skin.
Add the flour and mix through lightly to form a batter.
Spoon into muffin tins lined with muffin cups.
Sprinkle with some extra oats and place in the oven and bake for 15 minutes.
Then cut the other apple into 10 slices and place one on top of each muffin.
Bake for another 20 minutes or until muffins are cooked through.
Remove from the oven and lightly brush the apple tops with a little honey.
