Ingredients

  • 1 Lebanese cucumber (unpeeled, seeded and cut into 1cm pieces)

  • 2 large ripe nectarines (cut into 1cm pieces)

  • 4 green onions (sliced) and 8 cherry tomatoes (cut into quarters)

  • Add 1 lime (peeled and segmented, removing any white pith)

  • 2 sprigs coriander (chopped)

  • 2 sprigs mint (chopped)

  • 1 small red chilli (very finely chopped)

  • 1 tsp fish sauce (exclude or replace with soy for vegetarians)

  • 1 tsp lime juice

Method

  1. In a medium bowl, combine 1 Lebanese cucumber (unpeeled, seeded and cut into 1cm pieces),

    2 large ripe nectarines (cut into 1cm pieces), 4 green onions (sliced) and 8 cherry tomatoes

    (cut into quarters). Add 1 lime (peeled and segmented, removing any white pith), 2 sprigs coriander (chopped), 2 sprigs mint (chopped) and 1 small red chilli (very finely chopped). Toss ingredients gently, add 1 tsp fish sauce and 1 tsp lime juice and toss again. Serve salsa with barbecued chicken or vegetables.
