Peaches, apples, pears and apricots also work well cooked this way, as do pecans, hazelnuts and almonds.

Ingredients

  • 3/4 cup maple syrup

  • 4 nectarines, cut in half, seeds removed

  • 1 cup macadamias, cut in half

  • 1 tsp ground cinnamon

Method

  1. Pour maple syrup into a frypan and bring to the boil. Allow to boil for a few minutes to reduce. Add nectarines, skin-side down, and cook for one minute. Gently turn over and add macadamias and cinnamon. Keep on a high heat until nectarines become glazed and are warmed through (about 10 minutes). Serve as is or with vanilla ice-cream or custard.
