Ingredients

  • 3/4 cup oil (approx), for frying

  • 8 small pappadums

  • 100g sashimi tuna, thinly sliced

  • 1/2 tsp good quality curry powder

  • 1/2 tsp sea salt

  • 2 tsp finely chopped chives

Method

    1. Heat the oil in a small skillet over medium heat. Break off a little piece of pappadum and drop it into the oil. If it puffs up immediately, the oil is ready. If it browns too much, the oil is too hot.
    2. Cook each pappadum individually by sliding into the hot oil (they take only a few seconds) and cooking until they puff up and turn golden. Remove with tongs and set aside on paper towel.
    3. Place one or two slices of tuna into each pappadum, sprinkle with combined curry powder and salt and garnish with chives. Serve immediately.
