Parmesan tomatoes

Food is a wonderful way of bringing the family together but often there aren't enough hours in the day to prepare separate meals for children and grown-ups. Far better to discover dishes everyone enjoys.

Ingredients

  • two large or four smaller tomatoes

  • 1 cup fresh breadcrumbs,

  • 2 tbsp finely chopped parsley

  • 2 tbsp grated parmesan

  • 2 tbsp olive oil

  • salt and pepper

Method

  1. Heat the oven to 220C.

    Cut tomatoes in half, scoop out a little of the tomato and dice. Mix breadcrumbs,  finely chopped parsley, parmesan, olive oil and salt and pepper, and pile on the cut side of the tomatoes.

    Scatter the diced tomato over the breadcrumb mixture and bake for 20 to 30 minutes until topping is crusty.
