A quick and healthy recipe using pine nuts

Ingredients

  • 1 large pear (quartered, cored and sliced)

  • the juice of 2 limes

  • 1/4 cup extra virgin olive oil

  • sea salt

  • 1 small cos lettuce

  • 100g parmesan (shaved)

  • 75g pine nuts (toasted)

  • cracked black pepper

  • 1 large orange (peeled and segmented)

Method

  1. Toss 1 large pear (quartered, cored and sliced), the juice of 2 limes, 1/4 cup extra virgin olive oil and sea salt in a bowl. Place leaves from 1 small cos lettuce in a larger bowl and scatter with pear mixture. Add 100g parmesan (shaved), 75g pine nuts (toasted) and cracked black pepper. Toss gently to combine. Scatter over 1 large orange (peeled and segmented) and drizzle with a little extra virgin olive oil. Lovely served with T-Bone steaks
