You'll need to buy some fresh pesto or whip some up for this recipe. The stuffing in this dish not only protects the breast from drying out, but infuses the chicken with the warm, peppery flavour of basil.
2 tbsp pesto (Jill Dupelix's pesto recipe)
2 tbsp dried breadcrumbs
4 chicken breasts (skin on)
Mix 2 tbsp pesto with 2 tbsp dried breadcrumbs and push under the skin of 4 chicken breasts, patting flat.
Sear quickly in an oiled pan, then roast at 200C for 20 minutes.
Serve with a rocket salad or your favourite vegetables.
