In the house of my friends, the Broadways, these delicate biscuits are called "Phee's famous cheese straws". This is her late mother's recipe and it wouldn't be a Broadway Christmas without them.

Ingredients

  • 170g plain flour

  • pinch of salt

  • pinch of cayenne pepper

  • 120g cold butter

  • 170g vintage cheddar cheese, grated

  • 1 egg, beaten

  • about 1 tbsp lemon juice

Method

  1. Preheat oven to 200C. Whiz the flour, salt and cayenne (to taste) in a food processor for a few seconds. Add the cold butter in smallish pieces and process until the mixture resembles breadcrumbs. Add the cheese and continue to process while adding the egg, and the lemon juice until the mixture forms a ball with good consistency for rolling out (you may need to add a touch more lemon juice).

    Roll to about 3mm-4mm thick and cut into 15cm strips. Prick a few times with a skewer, place on baking paper, bake in hot oven 10-15 minutes.

    Store carefully in an airtight container as they are rich and break easily.
