Once seen as a stuffy drink of bygone generations, Pimm's is finding favour, mixed in all sorts of contemporary ways, among much younger drinkers. Poured over loads of ice with lemonade and/or dry ginger ale, Pimm's is one of the world's most recognisable and refreshing highballs.

Ingredients

  • 45ml Pimm's

  • 15ml gin

  • 5ml sugar syrup

  • Champagne to top up

  • Cucumber slice 

  • summer fruit (optional)

  • mint leaves

Method

  1. Half-fill a tall glass with cubed ice, add some fruit and mint.

    Pour in gin and sugar syrup.

    Add more ice and more fruit and top with champagne.

    Stir well and finish with a cucumber slice.
