For all of us who eat lunch on the run, these tasty wraps are perfect. They're easy to make, easy to transport and easy to eat. Which leaves you more time to sit at your desk and dream about those long, languid lunches ... Wasabi paste and nori sheets are available from Asian supermarkets.

Ingredients

  • 250g piece fresh tuna

  • Olive oil

  • 1 tsp wasabi paste

  • Juice 1/2 lemon

  • 1 tbsp extra virgin olive oil

  • 2 large rounds pita bread

  • 2 nori sheets

  • Handful snowpea sprouts

  • 1/2 red capsicum, cut into strips

  • Sea salt and freshly ground black pepper

Method

  1. In a hot frying pan, sear the tuna in a little olive oil for about 1 minute on each side, or until browned on the outside but pink in the middle (or as desired). Remove from the pan and cut into slices about 3mm thick.

    To make the wasabi dressing, whisk together the wasabi paste, lemon juice and extra virgin olive oil.

    On each round of pita bread, lay a sheet of nori and spread with wasabi dressing.

    Lay the tuna slices, single layer, over the nori and top with a small handful of snowpea sprouts and some capsicum strips.

    Season to taste and roll up like a kebab. Cut into rounds (optional).
