Porridge

Porridge is a sustaining breakfast and especially nice to warm you up on cold winter's mornings. Use traditional slow-cookingoats instead of instant or quick-cooking oats to keep this porridge in the low-GI range.

Ingredients

  • 100 g (3½ oz/1 cup) wholegrain rolled (porridge) oats (or rolled barley)

  • 125 ml (4 fl oz/½ cup) low-fat milk, plus extra to serve

Method

  1. Step 1

    Mix the oats with 375 ml (13 fl oz/1½ cups) cold water in a small heavy-based pan. Stir in the milk and bring to the boil. Cook for about 7 minutes, stirring constantly until thick and creamy. Serve immediately.

  2. Step 2

    Serve the porridge with low-fat milk. It is delicious with a dried fruit compote
