A great breakfast treat.
700g potatoes (peeled)
4 green onions (chopped)
4 tbsp self-raising flour
2 eggs
2 tbsp oregano (chopped)
2 tsp thyme leaves
salt flakes
¼ tsp chilli powder
2 heaped tablespoons
1/2 cup vegetable oil
Grate 700g potatoes (peeled) using a grater or food processor. Wrap grated potato in a clean tea towel and squeeze well to remove moisture. Place potato in a bowl and add 4 green onions (chopped), 4 tbsp self-raising flour, 2 eggs,
2 tbsp oregano (chopped), 2 tsp thyme leaves, salt flakes and ¼ tsp chilli powder. Stir well and form 2 heaped tablespoons of mixture into pancakes about 1cm thick. Heat 1/2 cup vegetable oil in a large frying pan over low heat and fry pancakes on both sides until golden and cooked through.
Serve with grilled beef sausages.
