Ingredients

  • 700g potatoes (peeled)

  • 4 green onions (chopped)

  • 4 tbsp self-raising flour

  • 2 eggs

  • 2 tbsp oregano (chopped)

  • 2 tsp thyme leaves

  • salt flakes

  • ¼ tsp chilli powder

  • 2 heaped tablespoons

  • 1/2 cup vegetable oil

Method

  1. Grate 700g potatoes (peeled) using a grater or food processor. Wrap grated potato in a clean tea towel and squeeze well to remove moisture. Place potato in a bowl and add 4 green onions (chopped), 4 tbsp self-raising flour, 2 eggs,

    2 tbsp oregano (chopped), 2 tsp thyme leaves, salt flakes and ¼ tsp chilli powder. Stir well and form 2 heaped tablespoons of mixture into pancakes about 1cm thick. Heat 1/2 cup vegetable oil in a large frying pan over low heat and fry pancakes on both sides until golden and cooked through.

    Serve with grilled beef sausages.
