Ingredients

  • 2-3 potatoes per person

  • 3 tbsp extra virgin olive oil

  • 4 cloves garlic, skin on

  • sprig rosemary

  • sea salt and freshly ground

  • black pepper

Method

  1. Lie a large piece of baking paper over a heatproof dish or roasting pan.

    Tip in olive oil, garlic cloves and rosemary. Add potatoes and a generous sprinkling of salt and pepper. Using your hands, roll the potatoes in the oil.

    Bring the longer sides of the parcel together and fold over and over, creasing well along the edge each time.

    Fold the remaining sides up in the same way then flip the parcel over so it's sitting on its seams. Cook the potatoes in a hot oven for 1 hour to an hour and a half.

    Open the parcel at the table so your guests can enjoy the garlicky aromas.
