The prawns with soba noodles are a really wholesome dish (trust me about the peanut butter). It's quick to whip up at the end of the day.

Ingredients

  • 3 small red chillies, deseeded and finely chopped

  • 1 tbsp tomato paste

  • 2 tbsp hoisin sauce

  • 2 tbsp crunchy peanut butter

  • 1 onion, finely chopped

  • 1 tbsp extra virgin olive oil

  • 250g soba noodles

  • 1 tbsp extra virgin olive oil, extra

  • 20 large green (raw) prawns, shelled and deveined

  • Lime wedges and sliced green (spring) onion, to serve

Method

  1. Place the chillies, tomato paste, hoisin and peanut butter in a bowl.

    Cook the onion in olive oil until soft and add to the bowl, along with 2-3 tbsp hot water. Mix until well combined and set aside.

    Drop the soba noodles into a large pot of boiling salted water and simmer for 5 minutes, or until just tender. Drain.

    Meanwhile, heat the extra oil in a heavy-based pan, add the prawns and cook over high heat for about 2 1/2 minutes each side, or until they just change colour.

    Toss together the noodles, prawns and chilli mixture and serve in bowls sprinkled with green onion and with lime wedges on the side. (Arrange the prawns on top of the noodles if you prefer.)
