Fresh pistachios are highly perishable. They should be kept in the fridge and eaten as soon as possible. They can be frozen in an airtight freezer bag for up to 12 months.

Ingredients

  • 8 large ripe figs

  • 2-3 tbsp runny honey

  • 1/2 cup shelled fresh pistachios

  • 160g mascarpone

  • Wafer biscuits, to serve

Method

  1. Preheat oven to 220 degrees.Cut figs halfway down into quarters, leaving the bases intact, and place in a buttered ovenproof dish. Drizzle each with about a teaspoon of honey. Coarsely chop pistachios and sprinkle into figs. Spoon a dollop of mascarpone into the centre of each fig and roast for about 10 to 12 minutes or until figs are soft. Serve figs with warm juices spooned over and wafer biscuits.
