- 4 pears (peeled, cored and quartered)
- 1/2 cup caster sugar
- 2 tsp orange zest (finely grated)
- 1 cup mascarpone
- 1 tbsp honey
- 50g flaked almonds (toasted).
Preheat oven to 220C. Place 4 pears (peeled, cored and quartered) on a lightly greased baking tray. Sprinkle with 1/2 cup caster sugar and roast, turning occasionally, for 15-20 minutes (depending on ripeness). Remove from oven and add 2 tsp orange zest (finely grated). Place 1 cup mascarpone and 1 tbsp honey
in a bowl and stir well. Serve pears topped with mascarpone and sprinkled with 50g flaked almonds (toasted).
