Ingredients

  • 1/3 cup caster sugar

  • 1/3 cup water

  • 1 rockmelon, skin and seeds removed

  • 6 mint leaves, julienned

Method

    1. Place the sugar and water in a small saucepan and heat, stirring until the sugar has dissolved. Boil for 1 minute, then remove from heat and cool.
    2. Juice the rockmelon and strain. Combine the juice with 50ml of the sugar syrup and pour into a shallow tray. Place in the freezer. After 2 hours, scrape and stir it with a fork until slushy and return to the freezer. An hour later, fork it through again and continue until frozen yet soft, with a granita consistency.
    3. Serve in small bowls or glasses sprinkled with mint.
