Ingredients

  • 45ml Tequila blanco

  • 30ml sweetened aloe vera water

  • (available at health food stores)

  • 15ml lime juice

  • 15ml sugar syrup (see below)

  • Dash of egg white

  • Cucumber flower, to garnish

  • For sugar syrup:

  • 1 cup of water

  • 1 cup of white sugar

Method

  1. For sugar syrup:

Place the water and sugar in a small saucepan over low heat and stir until the sugar has dissolved. Increase the heat and simmer until the liquid is clear. Remove from the heat, set aside to cool, then bottle. Date the bottle and refrigerate until needed. (Makes 400 millilitres.)

    For Silver Lining:

Place all the ingredients in a shaker, dry shake (with no ice), then add the ice and shake vigorously to emulsify the egg white. Pour into a chilled martini glass.

    Garnish with the cucumber flower.
