200 g snake beans or green beans
200 g dry soba noodles
1 tablespoon tahini
1 small garlic clove, crushed
1½ tablespoons rice vinegar
1½ tablespoons olive oil
1/2 teaspoon sesame oil
1 teaspoon soy sauce
2 teaspoons sugar
2 spring onions, finely sliced
3 teaspoons black sesame seeds
Trim the beans, and cut into long strips on the diagonal. Place in a saucepan of boiling water and return to the boil for 2 minutes, or until tender. Drain and refresh under cold running water. Drain.
Cook the noodles in boiling water for 3–4 minutes, or until they are tender. Drain and refresh under cold water, then drain again.
Combine the tahini, crushed garlic, rice vinegar, olive oil, sesame oil, soy sauce, sugar and 2 teaspoons warm water in a screw-top jar. Shake well and season to taste.
Combine the beans, noodles, spring onion and sesame seeds in a serving bowl, add the dressing and toss lightly to combine. Serve immediately.
