Ingredients

  • 1 tablespoon olive oil

  • 1 large onion, diced

  • 2 cloves garlic, crushed

  • 600 g beef mince

  • ½ cup (125 g) red wine

  • ½ cup (125 g) beef stock

  • 2 × 400 g cans chopped tomatoes

  • 1 carrot, grated

  • 350 g spaghetti

Method

  1. Step 1

    Heat the oil over medium heat in a large saucepan, add the onion and garlic and cook for 1-2 minutes, or until soft. Add the mince and cook, stirring to break up any lumps, for 5 minutes, or until the meat is browned. Pour in the wine and simmer for 2-3 minutes, or until reduced slightly, then add the stock and simmer for another 2 minutes. Add the tomato and carrot and season well with salt and pepper. Cook over low heat for 40 minutes.

  2. Step 2

    About 15 minutes before serving time, cook the pasta in a large saucepan of rapidly boiling salted water until al dente. Drain well and keep warm. Divide the pasta among four serving bowls and pour the meat sauce over the pasta. Garnish with parsley, if desired.
