Spiced blood plum crumble

A nice twist on the classic crumble

Ingredients

  • 140g plain flour
  • 120g sugar
  • 60g brown sugar
  • 85g ground hazelnuts
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 100g unsalted butter, melted
  • 1kg blood plums, washed, pitted and quartered
  •  

Method

Preheat the oven to 180C. In a large bowl, whisk flour, 60g of sugar, brown sugar, hazelnuts and spices. Slowly add melted butter and work into a crumb with a fork or your fingers. In another bowl, toss plums with remaining sugar. Transfer to a buttered gratin or other ovenproof dish and scatter crumbs on top. Bake in oven for about 50 minutes until plums are bubbling and crumb is brown. Remove from oven and allow to cool for a few minutes. Serve with vanilla ice-cream, double cream or runny custard.
