Quinces are a remarkable-looking fruit and I'll try not to get too romantic here, but it is difficult to ignore the very feminine, voluptuous shape of their dimples, bumps and curves and their beautiful perfume. It is easy to understand why there are so many references to these "golden apples", given as gifts to gods, kings and queens. Venus is often depicted with one in her hand.
4-5 quinces (about 1 kg)
850ml white wine vinegar
250ml water
700g sugar
12 cloves
peel of 1 orange
2 tsp peppercorns
3 tsp coriander seed
1 cinnamon quill
2 bay leaves (I prefer fresh)
Peel and quarter the quinces. Put everything in a pot and cover with baking paper and a weight. Simmer about 2 hours until soft and red. Cool in the syrup and refrigerate.
